This recipe renders the humble loaf something to be marvelled at with its impressive looking marbling and delicate aroma and taste from the perfect marriage of cardamom and coffee. Enjoy with coffee or tea, for breakfast, afternoon or supper.
- 175g butter
- 175g caster sugar
- 3 eggs
- 225g self raising flour
- 1 tsp baking powder
- 1 tsp vanilla extract
- 2 tbsp milk
- 2 tbsp coffee
- 1 tbsp cocoa
- Delhish Dabba (4 cardamom pods, seeds ground)
Step 1: Preheat the oven to 180°C / gas mark 4 / 350ºF and grease and line a loaf tin.
Step 2: Cream the butter and sugar, then add the eggs and the vanilla extract.
Step 3: Sift together the flour and baking powder with a pinch of salt and mix them into the butter sugar and egg mixture.
Step 4: Divide the batter into two bowls. Into one stir the milk and ground cardamom. Mix the cocoa in the coffee and stir that into the other bowl of mixture.
Step 5: Layer the two mixtures in the cake tin then drag a knife through the mixture in figures of eights.
Step 6: Bake for about an hour, or until a skewer into the middle comes out clean. Cool the cloaf in the tin for 15 minutes then turn it out onto a wire rack to continue cooling.
